Easy Whipped Cream

Light, fluffy whipped cream you can make in minutes. Sweeten to taste and use on pies, cakes, hot chocolate, or fresh fruit.

Ingredients

  • 2 cups heavy whipping cream (very cold)
  • 2 to 3 tablespoons powdered sugar, to taste
  • 1 teaspoon vanilla extract

Instructions

  1. Chill if you can: For best results, chill the mixing bowl and whisk attachment in the refrigerator for 10 to 15 minutes. Very cold cream whips faster and holds better.
  2. Combine: Pour the cold heavy cream into the mixer fitted with the whisk attachment. Add powdered sugar and vanilla.
  3. Whip: Start on low speed to avoid splashing, then increase to medium-high. Whisk until soft peaks form, then continue until stiff peaks form when you lift the whisk. This may take a few minutes depending on your mixer.
  4. Stop at stiff peaks: Do not overwhip. When stiff peaks form, the cream should hold its shape but still be smooth. If you overwhip and it becomes grainy, you can gently fold in a tablespoon of cold cream to recover texture.
  5. Use or store: Use immediately, or refrigerate in an airtight container for up to 24 hours. Rewhisk briefly if it has softened before serving.

Tips

  • For a less sweet cream use 2 tablespoons powdered sugar; for sweeter, use 3 tablespoons or more.
  • For extra stability (holding peaks longer) fold in 1 tablespoon of mascarpone or 1 teaspoon of instant dry milk per cup of cream.
  • If you need a non-dairy option, use a high-fat canned coconut milk chilled and whip only the solid cream portion, but results will be slightly different in flavor.
  • To flavor variations: add 1 teaspoon citrus zest, a tablespoon cocoa powder, or 1 tablespoon liqueur instead of some vanilla.

Storage

Store whipped cream in an airtight container in the refrigerator for up to 24 hours. For longer hold, stabilize as noted in Tips. Rewhisk gently before serving if needed.
